3/4 lb. boneless skinless turkey breasts, cut into bite-sized pieces
1 2/3 cups unsalted chicken broth
1 1/2 cups uncooked rice
4 ounces smoked turkey sausages, sliced
1 can (1 pound) unsalted tomatoes, crushed
1/2 cup thinly sliced celery
1/2 cup chopped onion
1/2 cup green bell pepper
1 tsp. fresh crushed garlic
1 bay leaf
1 - 2 tsp. Cajun or Creole seasoning
Rinse turkey, pat dry. Coat a pan with nonstick spray and preheat over medium high heat. Add turkey and stir-fry for 2 - 3 minutes. Add remaining ingredients and stir to mix. Bring to a boil, then reduce to low and cover. Simmer for about 50 minutes.
Makes 5 servings.
Per serving: 340 cal, 3.5 g fat
HINT: I don't use turkey breasts, I just use a can of chicken from Costco and eliminate that stir fry business. If I don't have celery or green pepper, oh well! Add a handful of frozen peas to it after the 50 minutes is up, or some other frozen vegetable. I put in a huge spoonful of garlic, not just a tiny tsp, and if I don't have those seasonings, well, experiment! Try cayenne, chili powder, oregano, paprika.
