Chocolate Lava Cake

1 cup flour
2 tsp. baking powder

2 Tbsp. butter
1/3 cup chocolate chips

2/3 cup sugar
3 Tbsp. Dutch processed cocoa
1 Tbsp. vanilla
1/4 tsp salt
1/3 cup skim milk
1 egg yolk

1/3 cup sugar
1/3 cup brown sugar
1/3 cup Dutch processed cocoa
1 1/2 cups hot water

I divided up the ingredients so that it will be easy to put together.

Spray the inside of your crock pot with some non-stick spray, or butter it.

In a mixing bowl, whisk together the flour and the baking powder and then set aside.

In a large microwave safe bowl, melt the butter and chocolate chips.  Mix well.

Into the chocolate mix, whisk the next set of ingredients: sugar, cocoa, vanilla, salt, milk and egg yolk.  Then add that flour mixture that you set aside.  Stir until it's thoroughly mixed.  Pour the batter into the crock pot and spread evenly.

Whisk together the remaining ingredients (that last set up there) - I did it in the same dirty bowl - until the sugar is dissolved.  Pour over the batter in the crock pot.  Do not stir!!!

Cover.  Cook on high 1 - 2 hours.  The cake will be very moist and floating on a layer of chocolate lava when it's done.  The cake will also start to pull away from the edges of the pot and the top will be set.  Turn off the crock pot and remove the lid so that the condensed steam doesn't drip on to your culinary masterpiece.  Let it cool for 25 minutes and then serve.  We ate it with ice cream and light whipped cream.

It's sort of light:  370 calories and 7 g fat (no trans fat, Dad).  72 g of carbs if you are counting.
