BANANA SNACK CAKE



1 cup sugar
1 cup butter, softened
2 eggs
1/2 cup buttermilk (you know I just squirt lemon juice in a measuring cup and add milk)
2 medium old bananas (the recipe says to smash them, but the mixer does it for you)
1 tsp. vanilla
2 cups flour
1 cup quick-cooking rolled oats
1 1/2 tsp. soda
1/2  tsp. salt
1 - 2 cups chocolate chips - use your discretion
1/2 cup chopped nuts (optional)

Preheat oven to 350  Grease 9 X 13 pan.  In mixer, combine sugar, butter and eggs.  Mix well.  Stir in buttermilk, bananas and vanilla.  Blend thoroughly.  Stir in flour, oats, soda and salt.  Mix well.  Add chocolate chips.  Mix well, of course.  Spread batter in prepared pan.  Sprinkle top with nuts.  Bake for 30 - 35 minutes or until knife inserted in center comes out clean.

To make cupcakes, I usually skip the nuts just because of the sprinkling mess.  Bake for about 29 minutes or until a lovely golden brown on top.
